Nic and Kelly were the most adorable couple I ever taught. They cooked Khao Soi Gai, which you may know as Northern coconut soup with chicken. I'm a very, very lucky person because all my classes have been grand. However, there are some times that I get more than I could've asked for. This class was one of them and it was marvelous. Both of them were cool to be with even on the hottest day I ever felt. One thing that was different this time was that we went to the market as they were requested long before they came. At first I was worried that they wouldn't like seeing pork head and other things that Thai fresh markets serve. But these two handled it like champs. They got exited by everything they saw and every detail that I told them. And what I loved the most was that they could eat pretty much everything, yaiy!
We came back to my wee house and as usual, they cooked the food from scratch. Each cooking process took sweet time and great biceps to create this awesome dish. After hours and hours of cooking, it came time to taste the food. I loved it, and so did they. They said it will now be difficult for them to have Khao Soi out there because they raised the bar high. I totally agree with that. I told them I have to cook secret here in my kitchen. But when I use fresh ingredients and make it myself, it always turns out super nice. I'm glad that I could be apart of their experience this holiday in Thailand. Even better, they learned how was like to experience a real authentic Thai dish.
