I was saying to the ladies, Emma & Karen, that I don't understand how can people still serve horrible food out there in the Thai markets! At first, the ladies didn't get what I meant by saying that. But when they got to cook and taste their homemade, real, Thai Green curry they both agreed with me. And I said, there is no secret here! The recipe that I teach isn't totally different from others. But one thing I do know is that me and my students, Emma & Karen, were making food from the heart. Another simple thing is, and most Thai school seem to not value this, the fresh ingredients that are all over the place in Thailand!
Today the cooking process was slow and it was the longest class that I ever taught. But, it was the most enjoyable class I've had. The spark of will to learn new different things and being openminded in them both has made me find myself again! I felt like I'm still young at heart. It was like being with old friends. Isn't that wonderful? You can feel and be young again. All you have to do just hangout with these two ladies.
I have to say that the ladies had so much energy, or were angry at someone before attending the class. They squeezed all the milk from the coconut flakes. They attempted to make the finest green curry paste. Thank goodness, they didn't break my mortar and pestle! My boyfriend even thought the construction workers were at it again down the street. I would suggest to anyone who makes these two upset, just run. Run as fast as you can.
Aside from making my class like a workout place, the ladies were also really nice and gentle and careful when they had to cut, roast, and cook food. And yet made my house smell so, so, nice. When the ladies stir-fried the curry with coconut oil and coconut milk, oh my god, they turned my house into heaven. I bet if anyone walked by they would come and beg for their amazing food. And that wasn't the highlight for the day. The highlight of the day was when the taste of the food they made touched my tongue. All my tastebuds had to open to enjoy the amazing favour. I was be able to taste every bit of so many flavours; creamy, herby, spicy flavours in my mouth all at once. And it was like each flavour worked one at a time in order to seduce me to have another bite. They nailed it without adding any seasoning once served! I don't believe that but it happened. Good job guys!
